Colombian coffee

Colombia boasts, consistently, some of the most excellent and approachable coffees in the world. Americans in particular are dispositioned to Colombian coffee because of its proximity to the US, and also how sweet the coffee is perceived to be. We call that “acidity”, but its perceived as sweetness. Let’s be honest, Americans have a bit of a sweet tooth, and this beautiful coffee is a hard one to mess up. There is intense flavor, but if you let the coffee cool off to room temperature, there some some fruity and delicate notes that emerge. You will notice how much fruit notes are in the cup as the coffee cools off.

Las Garzas - "the herons"

The terroir (earth and the environment its in) and the altitude of Colombia is suited perfectly for the production of coffee plants. At these elevations, coffee plants thrive, and the cooler climate allows the beans to ripen slowly, absorbing more sugars and developing complex flavor profiles. There is some difficulty in farming such dramatic elevation and hillsides, but the well draining, volcanic soils, along with warm days and cool nights are perfect conditions for growing amazing plants. The richness and composition of these particular volcanic mountains give Colombian coffee a certain flavor profile that feels heavier (more velvety) than it tastes (juicy and fruity).
